Speciale Italia Pumpkin and Porcini Mushroom Tagliatelle

Preparation Pumpkin and Porcini Mushroom Tagliatelle

1. Place the dried mushrooms in a bowl with warm water (for at least 10 minutes) to rehydrate.

2. Prepare the pumpkin by peeling it and cutting it into cubes, wash it under running water and place it in a pot where you have previously added 3 tablespoons of oil and half a clove of garlic.

Let it flavor and after a few moments cover the pumpkin with water, if the water evaporates add a little more during cooking, salt. Remember that almost until the end of cooking the pumpkin must be immersed in water.

3. Let it cook over medium-low heat for about 30 minutes. The pumpkin is ready when it has softened and pressing with a fork the cubes will easily crumble. Use the hand blender to get a cream and set it aside.

4. Put the pot with water on the stove to cook the pasta, in the meantime prepare the mushrooms: squeeze them after rehydrating them, put a pan on the stove (large enough to later contain the pasta as well) with oil and half a clove of garlic, when the garlic starts to brown add the mushrooms, let them sauté for a few minutes and also add the chopped parsley. When the mushrooms start to take color add the pumpkin cream.

5. Let them cook together for a couple of minutes; then drain the pasta al dente, pour it into the pan and let everything flavor by mixing.

6. Plate and serve adding the grated salted ricotta in flakes. A little chopped parsley and the dish is ready.

N.B. If you are not worried about calories you can also add a little cooking cream (perhaps porcini mushroom cream) it will make the cream thicker.

Enjoy your meal from Speciale Italia!
